Paneer Veg Pizza with Homemade Sauce

PANEER VEG PIZZA



I have recently joined the Home Bakers Challenge,a monthly baking event for blogger and non bloggers hosted by Priya from Priya's Versatile Recipes and some of her blogger friends.We can learn baking techniques  from other members.Every month one of the team members select a recipe and all the members have to bake it and reveal it on the said date.
This months baking challenge Divya picked pizza and given us four pizza recipes with different sauces.I chose pizza base from Martha Stewart's recipe.I tried home made sauce with some Indian spices to get an Indian flavour.


Recipe for Pizza Sauce:


Ingredients:
  1. 2 tomatoes-blanched,skin removed,chopped
  2. 2 tomatoes-pureed
  3. half capsicum-finely chopped  
  4. garlic-2-3tbsp,minced
  5. sugar-1/2tsp
  6. salt to taste
  7. fennel seeds powder-1/2tsp
  8. pepper powder-1/2tsp
  9. oregano-1tsp
  10. dry basil-1/2tsp  
  11. Olive oil-1tbsp
PANEER VEG PIZZA
 
Method:
  • Blanch the tomatoes and removed the skin.Chop  half of the tomatoes into small pieces and half of them are pureed.
  • Heat olive oil in a pan.Add chopped garlic and saute a while.Add capsicum pieces and saute for few minutes.
  • Add sugar and salt.Mix well.Add fennel seeds powder.
  • Add dried oregano and basil.Mix well.Cook for 10 more minutes or till it reaches the right consistency . 
  • Sprinkle pepper powder and switch off heat.  
  • Allow to cool.Grind the mixture and make a fine paste.
Recipe for paneer veg pizza:

For Pizza Base:

 Ingredients:
  • warm water-1/4cup
  • active dry yeast-3/4tsp
  • sugar-1/2tsp
  • milk-1/4cup
  • semolina or coarse grain corn meal or corn flour-for dusting
  • all purpose flour(maida)-1cup
  • salt to taste
  • olive oil or ghee -1tbsp
 For Topping:
  • pizza sauce
  • capsicum-1/2,
  • paneer cubes-7-10 cubes
  • onion-1/2
  • tomato-1/2chopped,de-seeded
  • garam masala powder-1/2tsp
  • chilly flakes
  • coriander leaves
  • cheese(any kind of cheese)-preferably mozarrella and Parmesan
Method:
  • Dissolve sugar in luke warm water and yeast.stir well and cover and keep it aside for 10 minutes till it becomes frothy.
  • Combine flour and salt in a mixing bowl.Add the yeast mixture and knead.
  • Add olive oil or ghee.Add milk and knead to make a smooth dough.
  • Brush the inside of the bowl with oil and place the dough in the bowl,smooth side up.
  • Keep covered with a wet cloth for 2 hours.The dough would have acquired double the size after the time.
  • Punch down the dough to remove air and roll it out to make 1cm thick pizza base.I spread the dough with my fingers leaving the edge around a little thicker,about a half inch wide.Do not press the dough all the way to the edges.
  • You can prick the base with fork to make sure of getting cooked everywhere.
  • Arrange the pizza dough into a circle on top of the cornmeal dusted peel.
  • Spread the sauce over the dough leaving the raised edge uncovered.Sprinkle the toppings in the list in that order ending it up with cheese toppings.
  • Preheat the oven to 210 deg C.Bake the pizza for about 10-15 minutes or until the cheese melts and the pizza base turns golden brown.
  • Check the pizza often to make sure it doesn't overcook or burn.   
  • Remove from the oven.
  • Cut the pizza with pizza cutter/knife and make wedges and Enjoy hot,spicy and yummy pizza.

I started baking recently only and really enjoyed the baking a lot now,so even if you are a beginner,or new to baking,please do not hesitate to try this one.Its very easy,easier than to our day to day cooking.....Thank you so much Priya and Divya for this Home Baker's challenge.

NOTES:
  • Any toppings can be used.
  • You can replace all purpose flour with wheat flour.
  • Make thin pizza base instead of thick one.
  • You can replace ordinary cheese with mozeralla and Parmesan.
  • I used my nonstick pan to get the round shape.You can even use the pizza tray.

Monkey Bread( Spiced with Italian Herbs)


Today I baked Monkey bread with Italian herbs for the Potluck party event hosted byJagruti's Cooking Odyssey.
I made Monkey Bread referring post from Archana of "Tangy Minds". She brought An Italian Spiced Herbs Monkey Bread to the party.Archana's pictures were so tempting and bread looked delicious. This was something very new to me and hadn't tried it before .....when done, the bread came out very well .. like it to the core , my hubby too liked it very much ...hence forth plan to make it quiet often. Archana,Thank you so much for sharing this dish with us!!!

In "Potluck party, cyber style" event, we members post their own favorite dish in the first part(on 10th of every month), latter have to cook and post the dish posted by person with whom you are paired with, in the  second part(on 28th of every month). Since we all are living in different parts of the world, we get a chance to know about cuisines of various regions .So this potluck party gives us a golden opportunity to cook and taste different regions cuisines. 

Here is the Recipe for Monkey Bread

  
Ingredients:

For the dough
  • All purpose flour-1.5cups
  • Yeast-1/2tbsp
  • Sugar-1tbsp
  • Egg-1
  • 1/2cup Milk plus Luke warm milk-10tbsp
  • Oil/butter-3tbsp
  • Unsalted butter-3tbsp   
  • Salt-1/4tsp
For making the herb spices 
  • White/black sesame seeds-1/2tsp
  • Oregano-1/2tsp
  • Garlic minced-1tsp
  Method:


  • Add the yeast to the luke warm milk with sugar,keep aside for few minutes until the yeast turns foamy.
  • Sieve the flour and salt in a bowl.
  • Now pour the risen yeast to the flour and salt containing bowl.Add a beaten egg also.Knead everything by using your hands or electric mixer.Knead well the dough for about 10 minutes.
  • Pour the dough into a greased bowl and cover it with wet towel.Allow it to rise for about 2 hours or till it rises.
  • Scrape out dough into the working surface.Lightly butter hands,divide the dough into equal portions.
  • Take each ball of dough,pinch and seal the underside so that each ball becomes smooth on top.
  • Now take each ball and dip it in the melted butter.Place them in the greased baking pan/bundt pan.I used around 9'' round nonstick baking pan.  
  • Leave some place in between each balls while keeping into the pan.The dough will rise again.Cover the pan with wet towel and keep this in a warm place for an hour until they double the volume.
  • Prepare the herbs under the ingredient as given.Mix well. 
  • Beat an egg white and brush this on top of the balls gently.Put already prepared herbs mixture on each ball generously. 
  • Bake it in a preheated oven for about 30-35 minutes at 180 degree celsius or 350 degree F.After it is done,take it out from the oven.
  • Brush the hot monkey bread with  the extra melted butter.Take care not to brush the herbs and seeds off.
  • Allow to cool. 

Serve the warm bread along with your favourite choice of pasta or soup......
