Ingredients:
- Jack fruit seeds/Chakkakuru -15-20nos
- Coconut(bite size pieces)-1/4cup
- Shallots/small onion-7-10,sliced
- Garlic-3-5 pods,crushed
- Chilly powder or(crushed dry red chillies 2-3)-2tsp
- Coriander powder-1tsp
- Turmeric powder-a couple of pinches
- Fennel seeds-1tsp,crushed
- Pepper-1tsp,crushed
- Mustard seeds-1/4tsp
- Curry leaves-2 sprigs
- Water-as required
- Salt to taste
- Oil-as required
- Clean and cut each seeds into 4-5 pieces length-wise.
- Cook the seeds with coconut pieces,turmeric powder,half of small onions,crushed red chillies or(chilly powder),coriander powder,a few curry leaves,sliced garlic,crushed fennel seeds,salt and required amount of water till the seeds are well cooked and soft.
- Heat coconut oil in a pan,splutter mustard seeds.Add the remaining sliced small onions,crushed garlic and curry leaves till the onion turns light brown.
- Now add cooked jack fruit seeds and some curry leaves.Sprinkle crushed pepper and stir fry over low heat until they turns crispy,adding more oil if required.Let it rest for minimum 30 minutes to get the real taste.
- It tastes better when you add the left over oil which is used earlier to fry any type of meat or cutlets.
- Keep the raw seeds in the refrigerator,to store for long time.The seeds get dried very fast when you keep it outside.
- Make sure that the seeds are not overcooked.
- Peel off the outer layer skins using knife before cooking.
